Wings

Wings are special to us. We find it easier to cook wings
whole and to pull them into their parts after they're done.

Directions:
Cut off skin between the 2 main parts of the wing.
Pat wings dry with paper towels. Spice up wings by
putting spice or rub in a small bag and
adding 2-3 wings at a time, and shaking bag.
Discard any spices remaining in bag. Cover and
refrigerate wings 1-24 hours.

Method #1

Cook on grill, but with spraying
non-stick oil on grill first.

Method #2

Preheat oven to 250'F. Use cookie sheet
lined with aluminum foil before spreading
wings on this. Bake until brown and shiny
on each side, turning once.

Note:
Wings are traditionally served with celery sticks
and blue cheese for dipping.
Additionally, a sauce made with 1 part
honey (warmed for easier mixing) with 2 to 3 parts
hot sauce provides a different perspective

HONEY WINGS

2 dozen chicken wings
8 c. Crisco for frying
Sauce:
1 1/4 c. ketchup
1/3 c. white vinegar
1/4 c. molasses
1/4 c. honey or duck sauce
3 cloves garlic, minced
1/4 tsp. liquid smoke
1/2 tsp. salt
1/2 tsp. tabasco
1/4 tsp. onion powder
1/4 tsp. cayenne pepper
Batter:
1 egg, beaten
1/2 tsp. soy sauce
1/2 tsp. chicken bouillon powder
1 c. milk
Breading:
2 c. flour
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. paprika
2 tsp. salt
1/2 tsp. pepper
In a saucepan, stir together all ingredients for sauce. Simmer gently 10 minutes. In a deep fryer or large heavy bottom pan, heat Crisco to 350 degrees.
Prepare batter by beating together milk, egg, soy sauce, and chicken bouillon. In separate bowl, combine seasonings and flour well.
Dip wings one at a time into seasoned flour, then into liquid mixture, then again into flour.
Fry in hot oil 10-12 min. Dip in sauce and serve with sauce dish in center of chicken wings arranged in a circle on a decorative platter.

Hot Wings:

These spicy little suckers are one of the best BBQ ideas ever. Nothing says, "Eatin' in the yard," like hot wings. Here's how to make up a bunch of these yummy appetizers that your crowd will really love.

What You'll Need:

• About 20 chicken wings
• Olive Oil
• ½ cup of Ketchup
• 2 tablespoons of brown sugar
• ¼ a cup of balsamic vinegar
• 4 teaspoons of garlic powder
• 3 teaspoons of Tabasco Sauce
• 2 teaspoons of mustard – you can use plain or Dijon
• 4 teaspoons of Worcestershire
• 2 teaspoons each of Paprika and Chili powder

What You Do:

You want to combine all of the ingredients except for the Olive Oil and the chicken. Place them all into a large mixing bowl and stir until they are thoroughly blended.

Rinse and dry the wings, and place them into a large Ziploc bag or a container with a lid. Place the mixture into the bag and shake until all of the wings are coated.

Put this in the fridge for around 4 to 6 hours. One of the greatest BBQ ideas is to start 'get together' foods like this the night before. Then they can sit in the fridge and soak up the goodness.

You want to get the grill nice and hot, and then take the wings out and throw the marinade away. Brush or spray the wings with the Olive Oil, and sear those babies on medium high heat for, oh, around 4 to 6 minutes.

After that, move them to an area of the grill where they can cook on indirect medium heat for around 8 minutes. You want to check and make sure that there is no pink remaining. This recipe makes around 6 servings. Enjoy!

Hot, Spicy Buffalo Chicken Wings

Hot! Hot! Hot! So beware.

If you like a bit of spice, real sinus clearing spice, then try these.

These chicken wings not only sound great - they are great. If your stomach and your family's stomach can handle hot food - these are finger licking good. Easy to make not a great deal of futzing around in the kitchen, and a great BBQ treat as well!

Ingredients:

1. 30 Wings

2. Canola Oil for Frying

Sauce Ingredients: (makes enough for about 30 wings)

1. 6 tablespoons Hot Sauce (use more or less, according to level of spice you like)

2. 1/4 cup (1/2 stick) margarine

3. 1 tablespoon white vinegar

4. 1/8 teaspoon celery seed

5. 1/4 teaspoon cayenne pepper

6. 1/8 teaspoon garlic powder

7. Dash of black pepper

8. 1/2 teaspoon Worcestershire Sauce

9. 1 to 2 teaspoons Tabasco sauce

Utensils You will need:

1. Deep Fryer or pan deep enough to fry in

2. Medium Sauce Pan

3. Large Bowl

4. Baking Sheet

Directions:

1. Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted. Stir occasionally.

2. The Wings: Fry the wings in a deep fryer set at 375º degrees Fahrenheit using Canola oil.

3. Fry 15 wings at a time for 12 to 15 minutes.

4. Drain the wings for a few minutes then put them in a bowl.

5. After all the wings have been fried, pour the sauce over them, cover the bowl, and shake to completely coat the wings.

6. They can be eaten now, or you can put them on a baking sheet and bake at 350 degrees for 10 minutes to get an extra-crispy coating.
