Pork chops 
How to cook pork chops:                         
 
Use uniformly thick loin chops or center-cut chops.
Pork chops will turn out much better when they're brined first.    
Start with this brine:               

 

For (4) chops, mix by volume in a bowl:
          1/4 C curing salt
          1/4 C brown sugar          (click here to learn more about brining)
          1t  Rib Spices
 
Place each chop in the bowl and rub mixture on
sides and edges-a nice thick coating.  Place chops
in a dish with sides, cover with plastic wrap, and
refrigerate for 1 hour.  Discard any remaining
brine mixture.
 
Rinse and soak in clean, cold water for about 20 minutes.
Remove from water and dry with paper towels.
 
Sprinkle all surfaces with Rib Spices and refrigerate,
covered, for 1 hour.
 
Heat cooker to hot and sear on each side for 3-4
minutes.  (cooker can be either a grill or a pan)
Insert an instant-read thermometer through on edge
into the center.  You're looking for an internal
temperature of 145'F, at which point they are done.
 
They can be done on either a grill or frying pan
(covered) (put a little oil on the grill or pan)
 
Now, you will know what this brining business
is all about, and realize that it was indeed worth
the little extra effort.
 
These will be the best pork chops you ever ate!
 
They can also be done in the oven.
Heat oven to 425'.  Put spiced chops on a cookie sheet
with small sides.  Bake for 15 minutes on one side,
then for 20 minutes on the other side.
 

BAKED ORANGE PORK CHOPS  
   4 to 6 pork chops
5 tbsp. sugar
1 1/2 tsp. cornstarch
1/4 tsp. salt
1/4 tsp. cinnamon
10 whole cloves
1/2 c. orange juice
2 tsp. grated orange rind
Orange slices
Shake and Bake or similar coating

 

Bake pork chops with Shake and Bake type coating per package directions. Combine sugar, cornstarch, salt, cinnamon, cloves, orange juice, and orange rind in saucepan until thickened and clear. Ten minutes before pork chops are done, add sauce and garnish with orange slices. Continue baking for 10 minutes.

 

BAKED PORK CHOPS  
   3 thick cut pork chops
1 med. onion
2 baking apples
1/2 c. Gulden's mustard
1/2 c. honey

 

Sprinkle pork chops with salt, pepper and paprika. Spread mustard on both sides of meat. Place in a Pyrex dish. Cut onion into small cubes and place on top of pork chops. Top also with sliced apples. Pour honey over pork chops, onions, and apples. Bake, uncovered, at 350 degrees for 1 hour. Serves 3.
